Chocolate Chip Cookies

A new twist on a classic recipe, these cookies use coconut oil and your favorite bar of chocolate to create a sophisticated yet nostalgic kind of cookie. Roll your dough into a log for a speedy slice-and-bake process, and admire the uniform, utterly delicious cookies you will create.

We used a bar of blackberry and sage chocolate in this batch, but you can use any type of chocolate bar you want, or substitute chocolate chips.

Ingredients
  1. ½ c. coconut oil*
  2. ¼ c. non-dairy milk*
  3. 1 c cialis overnight delivery online. granulated sugar
  4. 1 tbsp. ground flax seeds
  5. 3 tbsp. water
  6. 1 tsp. vanilla extract
  7. 2 c. all purpose flour
  8. ½ tsp. salt
  9. 2 tsp. cornstarch
  10. 1 tsp. baking soda
  11. 2 oz. chocolate
Instructions
  1. Whisk flax and water in a small bowl or measuring cup.
  2. Beat sugar and oil in a large bowl. Add flax mixture, non-dairy milk and vanilla extract.
  3. In a third bowl, sift together flour, cornstarch, baking soda and salt.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until well incorporated.
  5. Chop chocolate bar into small bite size pieces, or add chocolate chips. Gently fold chocolate into dough.
  6. Pre-heat oven to 350°F.
  7. Roll dough into a log, approximately 3 inches in diameter and 18 inches long. Wrap log in parchment paper or plastic wrap and place in refrigerator for 10-15 minutes or until you are ready to bake.
  8. Remove log from refrigerator, unwrap dough and slice into ½ inch thick slices.
  9. Place slices onto an un-greased cookie sheet and bake for 12-15 minutes or until slightly golden brown along the edges.
  10. Remove cookies from oven and let cool. Enjoy!
Notes
  1. The coconut oil will be easier to work with if it is at room temperature or if you gently melt it in advance.
  2. We used sunflower milk for this recipe, but feel free to use any (unsweetened) non-dairy beverage you enjoy.
